A pan that will not tilt sounds like the expensive end of the machine. It was a capacitor.

The call
A restaurant here in Cresskill — our own town — called about the tilting skillet. The pan would not tilt. Everything else was normal: it heated, it held temperature, the controls answered. The one thing it would not do was the thing that makes it a tilting skillet.
On a pan this size that is not a small loss. Nobody is emptying it by hand in the middle of service.
What we found
The tilt on this machine is neither hydraulic nor a hand crank. It is driven by a linear actuator running on 24 volts DC, and that supply is made inside the appliance’s own control box.
The actuator itself was fine. The gas side had nothing to do with any of it and never entered the question. What had failed was a capacitor in the control box that feeds the actuator — and with it gone, the supply could no longer do what moving a loaded pan asks of it.
This is worth writing down for what it saves. “It will not tilt” sends people straight at the moving parts: the actuator, the linkage, the gearbox. Those are the expensive things on a machine like this. The part that had actually failed fits between two fingers.
The fix
The capacitor was replaced, and the tilt was run through its full travel and watched before we left.
A boundary worth naming here, the same way we name it on gas: what we work on is the appliance and its own electronics. The wiring in the building is a licensed electrician’s work, not ours, and we do not go near it.
One thing worth carrying away if you run a kitchen. When a machine does one job badly and every other job well, that is usually good news. A fault that takes out a single function and leaves the rest untouched is nearly always a component rather than the machine.
